Sushi Rice

This recipe can make 20-30 nigiris.

Rice

1 cupsSushi rice
1 cup + 2 tbspWater
  • Raise the rice three times until the water is clear. Add more water and soak the rice for 30 minutes.
  • Drain the water completely using a sifter and put it in a pot. Added 1 cup and 2 tbsp of water.
  • Use high heat to bring it to a boil. Turn the heat down to the lowest heat, let the rice simmer for 20 minutes. Don’t lift the lid while cooking. If the rice is too wet, simmer it a little longer.
  • Turn the heat off. Let the rice sit for 15 minutes, keep the lib on.

Vinegar Mix

1/3 cupRice vinegar
1 tspSalt
2 tbspSugar
  • While cooking the rice. Heat the vinegar, salt and sugar mix until salt and sugar resolve. Set it aside to let it cool.

Mix Together

  • Dump the rice to a large bowl. Spread it out with a wooden spoon so it cools faster.
  • Slowly pour the vinegar mix to the rice and mix them together.
