I have tried so many dumplings recipes. This is absolutely the best one! Thanks to the amazing Youtube channel Laofangu.
Except for shrimp and pork, it has another very important ingredient: Garlic Chives. It gives the dumpling a unique flavor and can not be replaced. You can find it in most Asian grocery stores.
Original Recipe
My Version
This recipe makes about 40 dumplings, can serve 2-3 people.
Dough
1 | 300g | All-purpose flour |
2 | 140ml | Cold water |
3 | 1/4 tsp | Salt |
- Mix all above to a very hard dough. Let it rest for more than 20 minutes.
Filling
1 | 1/2 pound | Ground pork |
2 | 2 tbsp | Soy sauce |
3 | 0.5 tbsp | Sesame oil |
4 | 6 tbsp | Stock |
5 | 3/4 tsp | Salt |
6 | 1/4 | Egg white |
7 | 1 tbsp | Chopped dried shrimp |
8 | 1 tbsp | Finely chopped ginger |
9 | 2 tbsp | Chopped green onion |
10 | 8 | Chopped fresh shrimp (large chunks) |
11 | 1/4 pound | Chopped garlic chives |
12 | 2 tbsp | Oil |
- Slowly mix in soy sauce, sesame oil and stock in ground pork. Stir in one direction until the texture becomes sticky.
- Mix in egg white, stir.
- Put 7-9 in, stir.
- Put 10 and 11 in, stir.
- Add oil in, and mix it well. This is a crucial step that will lock the water in. Yes, delicious food is heavy. If your pork is lean, you can put 1-2 more tbsp of oil in.
Make Dumplings

Cook
- Fill a large pot with 1/2 water. Add 1 tsp salt. Bring it to boil.
- Put all ~40 dumplings in and put the top on. Medium heat.
- When it starts to boil again, put a half cup of cold water in then close put the top back on again.
- Repeat the same process three times (3 times cold water), when the water boil again, add a half cup water again, then use a slotted spoon to take the dumplings out to plates.
