Marinate
- Onion cut into big chunks
- Ginger slices
- Salt
- Ground white pepper
- Freshly grounded Xinjiang cumin 孜然
- Egg white
Cut the lamb to half inch cubes and marinate in the above seasonings for 30 mins.
Dry seasonings
- Roasted sesame seeds
- Chili powder
- Freshly grounded cumin 孜然
- Salt
Grill the skewers 8 mins per side. Add the dry seasonings on both sides. Grill for another 1-2 mins.
