Broccoli Cheddar Soup

Ingredients

Butter2 T
Onion1/2, minced
Garlic2 cloves, minced
Flour4 Tbsp
Chicken Stock2 Cups
Carrots1 Cup, shredded
Broccoli2 – 3 Cups, break into small pieces
Half & Half2 Cups
Cheddar Cheese2 Cups, shredded

Direction

  • Cook onion and garlic in butter until golden, add flour mix well, then chicken stock.
  • Bring the soup to boil, add carrots and broccoli. Simmer for 15 – 20 minutes until the vegetables become soft.
  • Add half & half, cheese and bring to boil again.
