Raise the rice three times until the water is clear. Add more water and soak the rice for 30 minutes.
Drain the water completely using a sifter and put it in a pot. Added 1 cup and 2 tbsp of water.
Use high heat to bring it to a boil. Turn the heat down to the lowest heat, let the rice simmer for 20 minutes. Don’t lift the lid while cooking. If the rice is too wet, simmer it a little longer.
Turn the heat off. Let the rice sit for 15 minutes, keep the lib on.
Vinegar Mix
1/3 cup
Rice vinegar
1 tsp
Salt
2 tbsp
Sugar
While cooking the rice. Heat the vinegar, salt and sugar mix until salt and sugar resolve. Set it aside to let it cool.
Mix Together
Dump the rice to a large bowl. Spread it out with a wooden spoon so it cools faster.
Slowly pour the vinegar mix to the rice and mix them together.
