Rice
Soak 1 cup of rice for 1 hour.
Sauce
Bring the following to boil. Turn the heat down and boil for 5 mins.
40 ml | Soy sauce |
150 ml | Water |
5 | Crystal sugar |
1/2 cup | Onion |
6 stems | Cilantro |
2 | Green onion |
Toppings
2 | Chinese sausage (腊肠) – chopped to long slices |
2 | Chinese broccoli – boiled for 30 seconds |
1 tbsp | Chopped green onion |
Cook
- Heat the clay pot, put one tbsp oil in and brush it to cover inside of the pot.
- Drain the rice, then put it in the pot. Add one cup of water in. After it starts to boil, turn the heat down and cook for 8-10 minute until the water is gone.
- Add the sausage on top of the rice. Put the top back on. Drizzle some oil along the edge of the top.
- Change the angle of the pot to create the crispy texture for the rice. This process is called “Ju(焗)”. After around 8 minutes. It’s done.
- Put the Chinese broccoli on top. Pour some sauce and add the green onion. It’s ready to serve.
