I prefer Chinese spinach for this dish. Compare to the spinach you can find in local stores, it tastes less bitter. It doesn’t give you the spinach teeth if you know what I mean. You can find in Asian grocery stores.
Peanuts
- Put 1 tbsp oil in a pan, stir fry 50g peanuts in medium-low fire until golden brown. You can always cook more peanut, and keep the rest for later.
Spinach
1 | 2 cloves | Minced garlic |
2 | 1 tbsp | Soy sauce |
3 | 1 tbsp | White vinegar |
4 | 2 tsp | Sugar |
5 | 2 tsp | Sesame oil |
6 | 1/4 tsp | Salt |
- Boil half pot of water with a little oil. Put 350g Chinese spinach in and boil for 30 seconds.
- Take the spinach out and put it in cold water. Squeeze the water out and cut to 1inch chunks.
- Mix all seasonings above and add to the spinach.
Put the peanuts in, gently mix everything together.
